Mushrooms Martindale

Here’s a side dish with a difference for a Cocktail Party. You’ll need to prepare it at least 24 hours before serving, but it is absolutely delicious. You’ll need:

  • 1 kg Button Mushrooms
  • The juice of 1 lemon
  • 60 ml water
  • 100 ml wine vinegar
  • 7 tablespoons Extra Virgin Olive Oil
  • 3 cloves garlic, crushed
  • 1 teaspoon thyme
  • 1 teaspoon chopped parsley
  • 1 Bay leaf
  • 4 peppercorns

Wash the mushrooms, drain well and put to one side in a large jar or bowl. Boil all the other ingredients and simmer for 15 – 20 minutes then pour over the mushrooms. Leave for 24 hours.
Serve decorated on a serving dish.
