Potato Treats

This is a good way to use up left over mashed potatoes. For each breakfast cup of mashed potatoes add a beaten egg, a teaspoon of butter and a tablespoon of milk. Beat together until the mixture is fluffy but stiff. Either fry in a little butter of bacon fat, or you can arrange in large spoonfuls on a baking sheet and place in a hot oven until the outside turns crisp. As an alternative try adding a little grated cheese while at the mixing phase. If it’s to your taste you can also add a little finely chopped onion.
